Peanut Butter Protein Fudge
After so many requests for peanut butter recipes, you know I had to create this delicious, easy and healthy fudge for you!
Fudge has always been a fave treat of mine and now that @whitewolfnutrition have their peanut brittle flavour out, this was a must and I can confirm it has been an absolute WINNER among the lucky few I shared this with.
HERE’S THE RECIPE:
➡️ 1 cup Almond Meal
➡️ 1 cup 100% Peanut Butter
➡️ 1/2 cup melted coconut oil
➡️ 1/2 cup crumbled peanuts (raw or dry roasted)
➡️ 1 heaped scoop White Wolf Nutrition Peanut Brittle protein powder – link to site is below (recipe can be made without this if you can’t get it)
➡️ 1/4 cup Maple Syrup or to taste (I recommend sugar free so reduce calories) (You may only need this if you are not using the protein powder).
METHOD:
1️⃣ Mix all ingredients, except Maple Syrup together in a bowl
2️⃣ Taste for sweetness before adding syrup
3️⃣ Test thickness by running a spoon through – it should leave a gap behind it briefly
4️⃣ Pour into a slice tray and place in fridge to set
5️⃣ Slice into squares and serve
6️⃣ Keep it below room temp to maintain solidity
NOTE: I didn’t need the Maple Syrup in the end as the protein adds all the deliciousness and sweetness I needed!
